- Unique Origin: It is native to Sri Lanka and thrives in the island’s unique soil and climate.
- Delicate Flavour & Aroma: Unlike the harsher, bolder flavour of Cassia cinnamon (common in many supermarkets), Ceylon Cinnamon offers a subtly sweet, warm, and complex flavour profile with delicate floral notes.
- Appearance: True Ceylon Cinnamon quills are identifiable by their thin, papery layers rolled together like a cigar, and their tan-brown colour. Cassia bark is typically thicker, harder, and darker.
- Low Coumarin Content: This is a key differentiator. Ceylon Cinnamon naturally contains significantly lower levels of coumarin, a compound that can be harmful in large doses. This makes it the preferred choice for regular consumption and health-conscious individuals.
